Macaroni Salad is a quick, easy and delicious summer salad. It can be served for dinner or lunch. It is also served in parties and get-togethers. It is one of the favourite salads of kids.
For hot summer days this Cool Classic Macaroni Salad is a perfect and healthy salad. Try this Classic Macaroni Salad:
Elbow macaroni 4 cups
Mayonnaise 1 cup
White vinegar ½ cup
Sugar ½ cup
Salt 2 ½ tsp
Black pepper power ½ tsp
Onion (chopped) 1
Celery (chopped) 2 stalks
Green bell pepper (chopped) 1
Carrot (grated) ¼ cup
Pimento pepper (chopped) 2 tbsp
Yellow mustard 2 ½ tbsp
Procedure for preparing Summer Salad – Classic Macaroni Salad:
- In a vessel boil water (for 4 cups Macaroni 20 cups water), once the water is boiled add Macaroni, 1 tsp salt and 1 tsp oil and cook till tender about 8 minutes stirring occasionally. So the Macaroni does not get struck at the bottom. After Macaroni is cooked remove from flame. Strain and run cold water through it and keep aside.
- In a large bowl, mix together mayonnaise, vinegar, sugar, mustard, salt and pepper powder. Mix well onion, celery, green bell pepper, carrot, pimentos and Macaroni.
- Chill the Macaroni Salad for at least one hour before serving.
