Maharashtrain Goda Masala is the famous masala that is used in curries and dal curries in Maharashtrain recipes.
Ingredients:
Cumin seeds 1.5 tsp
Shahi jeera ½ tsp
Black caradamom 4
Cloves 10
Black peppercorns 3 tsp
Bay leaves 10 – 12
Coriander seeds ¾ cup
Mace 1 blade
Whole dry red chili 4
Sesame seeds (til) 1 tsp
Dry coconut grated ¼ cup
Stone flower (dagad phool) 1 tbsp
Cobra`s saffron (nagkeshar) 1 tsp
Asafoetida ¼ tsp
Procedure for preparing Homemade Goda Masala:
- Heat oil in a pan and roast cumin seeds, shahi jeera, black cardamoms, cloves, black peppercorns, bay leaves and coriander seeds.
- Add cinnamon, mace, whole dry chili, sesame seeds, dry coconut, dagad phool, nagkeshar and asafetida and continue to roast till a nice aroma is given out. Cool and grind to a powder. Cool and store in airtight containers.
