MUNAYAKAYA TOMATO IGURU – DRUMSTICK TOMATO IGURU

Munayakaya Tomato Iguru is an easy and tasty drumstick recipe. Today I am posting Munayakaya Tomato Iguru which was passed to me by my neighbor. It is prepared in Andhra style. It is prepared with drumsticks cooked in thick onion and tomato gravy with spices.

It goes well with rice and roti.

Ingredients:

Drumsticks                          4

Onions                                  2

Tomato                                                1

Turmeric powder             ½ tsp

Red chilli powder             1 tsp

Salt to taste

Oil                                           3 tsp

Method:

  1. Scrape the drumstick skin. Cut each drumstick into 2” pieces.
  2. Wash the drumstick pieces.
  3. In a pan heat oil. Add chopped onions and fry till light brown.
  4. Add turmeric powder, red chilli powder and salt fry for a minute on low flame.
  5. Add chopped drumstick pieces and chopped tomatoes. Close the lid and allow cooking. Add ½ cup of water and stir well. Keep stirring occasionally. Close the lid and cook till the drumstick pieces are cooked and well coated with the masala.

Spice and tasty Munagakaya Tomato Iguru is ready. Serve with rice as a side dish.
