Ragi (Finger millet) is a highly nutritious grain. Ragi has a high fibre content. It is rich in iron and hence its good for anaemia. Being low in unsaturated fats, ragi proves to be prefect cereal if you are looking for weight loss. Ragi is also rich in protein which makes it a very valuable cereal to prevent malnutrition.
Today I am posting Ragi Laddu which is prepared using ragi flour, grated coconut, peanuts, til, jaggery and ghee. This ragi laddu is nutritious.
Ingredients:
Ragi flour 1 cup
Coconut grated 1/4 cup
Peanuts 2 tbsp
Til 2 tbsp
Ghee 2 tbsp
Cardamom powder 1/2 tsp
For jaggery syrup:
Jaggery 3/4 cup
Water 1/4 cup
Method:
- Heat ghee in a pan. Add grated coconut and fry on low flame for 1 – 2 minutes and keep aside.
- Add the ragi flour to the ghee and fry for 5 – 6 minutes on low flame till nice aroma comes out. Keep it aside.
- Dry toast separately peanuts and til.
- Remove the skin of peanuts.
- In a vessel heat jaggery and water. Boil the jaggery syrup till it reaches a ball consistency. ( to test whether the syrup is ball consistency- take water in a glass and put a drop of jaggery syrup in it. It should become a soft ball consistency). Put off the flame. Strain for any impurities.
- Now add ragi flour, coconut grated, til, peanuts and cardamom powder and mix well.
- Grease your palms with ghee. Roll small balls out of the ragi mixture into sweet ragi laddus.
