YOGURT SPROUT CURRY

Sprouts are rich in nutrients and antioxidants and eating them can improve your digestion and blood sugar level. They are also high in protein. It helps in weight loss and strengthens immune system. Sprouts also prevents anaemia.

Today’s post is about adding yogurt to the usually mixture of sprouts, carrot, tomatoes, green chillies.

INGREDIENTS:

Carrot grated                                              2

Green gram sprouts                                  ¾ cup

Tomatoes finely chopped                          2

Green chilies slit                                        4

Yogurt whisked                                           2 cups

Mustard seeds                                             1 tsp

Cumin seeds                                                 1 ½ tsp

Turmeric powder                                         ½ tsp

Asafoetida                                                      ¼ tsp

Oil                                                                   1 tbsp

Salt for taste

For garnishing

Coriander leaves few

METHOD:

  1. Heat oil in a pan and add mustard seeds and cumin seeds, allow it to splutter.
  2. Add asafoetida, green chilies, turmeric powder and tomatoes.
  3. Cook till tomato become soft.
  4. Now add grated carrot, sprouts and salt and cook for2 minutes
  5. Remove form fire and allow it to cool.
  6. Add yogurt and mix well.
  7. Garnish with coriander leaves when ready to serve.
