ANDHRA CHICKEN FRY – SPICY CHICKEN FRY RECIPE

Andhra chicken fry is a spicy chicken fry recipe which goes well with sambar, rasam pulusu and charu. it can be served as a side dish or as starters.

I tried this recipe and turned out to be a success, which my family members just loved it. This recipe is forwarded to me by my friend Padma. Thank you Padma for your lovely and simple recipe.

in this Andhra style chicken fry, we don’t use onions. So this recipe stays fresh for 2 days. But I didn’t get the chance to stock it as my chicken fry was cleanly completed within 1 hour of its preparation.

Let’s go straight into the preparation of Spicy Andhra Chicken Fry.

Ingredients:

Chicken (boneless)                  500 g

Lemon                                      1

Oil                                            4 tsp

For margination:

Red chili powder                    3 tsp

Turmeric powder                   ¼ tsp

Salt                                          1 tsp

For grinding:

Ginger – garlic paste            3 tsp

Patta                                       1

Clove                                      4

Star aniseed                          1

Jeera                                     ¼ tsp

For garnishing:

Mint leaves                         6

Coriander leaves                1 tbsp

Procedure for preparing ANDHRA CHICKEN FRY:

1.Marinate chicken pieces with turmeric powder, red chili powder and salt and mix well and keep aside or refrigerate for 45 minutes or 1 hour.

2.Grind together ginger-garlic paste, patta, cloves, star aniseed and jeera into a fine paste.

3.Heat 4 tsp oil in a kadhai then add the ground paste and fry for some time about 3 – 4 minutes. Then add marinated chicken pieces and stir fry for 2 -3 minutes and close the lid and cook till the chicken is tender. Keep stirring occasionally so that the chicken is not burnt down.

4.Then add the lime juice of 1 lemon and mix well. Cook for further 5 minutes and then put off the flame.

5.Garnish with few mint leaves and coriander leaves.

Spicy Andhra Chicken Fry is ready.

Note:

  • For more sour taste U can add the juice of one more lime.
  • U can add salt according to your preference.
  • Andhra chicken fry stays fresh for 2 days as no onions are used.
