Unniappam is a traditional sweet recipe of Kerala. Unniappam is prepared using rice flour, jaggery and banana. It is prepared during special occasions and festivals like Onam and Vishu. Unniappam is offered as prasadam in many temples in Kerala.
Let’s go thru the process of preparing the delicious Unniappam:
Ingredients:
Raw rice 1/2 kg
Wheat flour 2tbsp
Jaggery 350 gms
Water 3/4 cup
Coconut bits ½ cup
Banana 1-2
Baking soda a pinch
Cardamom pods 2 -3
Jeera 1 tsp
Salt a pinch
Ghee as required
Coconut oil as required
Procedure for preparing Unniappam:
- Soak the raw rice for 4 hrs.
- Melt jaggery with ¾ cup of water and make a thick syrup. Put off the flame. When cool strain the syrup for any impurities.
- Drain the water from rice and grind the rice to a paste, add jaggery syrup, banana, wheat flour and cardamom pods and grind into a coarse paste.
- In a pan add 3 tsp of ghee and fry the coconut bits till it becomes light brown in color.
- Add the fried coconut bits, jeera, salt and baking soda to the batter and mix well.
- The batter should be neither too thick or thin. It should be of idli batter consistency.
- Keep this batter for 6-8 hours so that u will get soft unniappams
- Place the unniappam chatty/unniappam pan on the stove and pour equal amounts of ghee or coconut oil in each mould. Each mould should be half filled.
- Once the oil or ghee is hot add scoop of batter over each mould.
- Allow to cook for a minute and invert them with a skewer or a knife.
- Allow to cook again till light brown
- Again invert and cook until golden brown from both sides.
Delicious Unniappam is ready to be served.
