MURINGAYILA THORAN – DRUMSTICK LEAVES FRY

Drumstick leaves or Muringayila has lots of medicinal value. The leaves are an excellent source of many vitamins, minerals and proteins.

The power of reducing the sugar level in the blood is possessed by drumstick leaves. Eating drumstick leaves is believed to increase breast milk production in new born-mothers. It also boosts the immune system.

Drumstick leaves are consumed raw or as juice or prepared as soup. Today I, am posting a recipe using drumstick leaves and coconut. It tastes good and it is a healthy drumstick leaves fry.

Ingredients:

Drumsticks leaves/Muringayila                  3 cups

Oil                                                                     4 tsp

Coconut grated                                                ¾ cup

Jeera/cumin seeds                                          1 tsp

Mustard seeds                                                  1 tsp

Green chillies                                                     3

Dry red chillies                                                  2

Curry leaves                                                       1 strand

Onions (chopped)                                              1

Garlic (lengthwise chopped)                            6

Turmeric powder                                               1/2 tsp

Salt to taste

Procedure for preparing Muringayila Thoran/Drumsticks Leaves Fry:

  1. Clean, wash and drain the drumstick leaves.
  2. In a kadai heat oil, add mustard seeds and jeera when it splutters add chopped onions, green chillies (slit), broken dry red chillies, garlic (chopped lengthwise), curry leaves, turmeric powder and salt and fry till the onions turn transparent then add the grated coconut and fry for 1-2 minutes then add the drumsticks leaves and stir well and fry for 3-4 minutes and put off the flame.

Muringayila Thoran is ready. Serve as a side dish for rice or chappatis.
