Sakara Varatti is one of the famous snacks of Kerala. It is prepared with Nendrakai coated with jaggery syrup and spices.
Sarkara Varatti has a sweet and spicy taste. It is a bit harder to chew but it has a lovely sweet and spicy taste.
Sarkara Varatti is an important snack in Kerala Sadhya.
The procedure of preparing Sakkara Varatti is as follows:
Ingredients:
Nendrakai (Raw plantain) 2
Coconut oil for deep frying
Jaggery 75 g
Sugar 25 g
Dry ginger powder 2 tsp
Jeera powder 1 tsp
Cardamom powder ½ tsp
Method for preparing Sarkara Varatti:
- Peel the bananas and cut it lengthwise into 2 halves.
- Then cut it into semi-round shapes into ½ cm thick pieces.
- Heat the oil in a kadai or wok add the banana pieces and deep fry them or till they turn golden yellow in color or till they become crispy.
- Take the chips out of oil and drain the excess oil by placing the chips on kitchen paper and allow it to cool.
- Make jaggery syrup by boiling little water and jaggery. Make one string consistency, i.e., add a drop of the jaggery into a glass of water if it settles down like a drop in the water the consistency is right.
- Strain the impurities of jaggery syrup.
- Add fried banana pieces to the jaggery syrup and stir well till the jaggery is well coated over the banana pieces. Put off the flame.
- Add the sugar and stir continuously so that the banana pieces are well coated with sugar and also to prevent the chips from sticking to each other.
- Add dry ginger powder, jeera powder and cardamom powder and mix well so that the banana pieces are well coated with the powders.
- When cool transfer to airtight container.
Sarkara Varatti is ready to munch.
