BOILED EGG MASALA FRY

Egg consumed in any form is nutritious for health as it contains Proteins, Vitamins, Minerals and essential fatty acids.

Today I am posting Boiled Egg Masala Fry which is prepared using boiled eggs, grated coconut and spices.

Ingredients:

Eggs (boiled)                                   6

Coconut (grated)                            ¾ cup

Mustard seeds                                 1 tsp

Green chillies                                   3

Red chilli powder                            2 tsp

Turmeric powder                             ½ tsp

Coriander leaves                            1 bunch

Lemon juice                                   1 tbsp

Oil                                                  3 tsp

Salt to taste

Method:

  1. Heat oil in a pan add mustard seeds when it splutters. Add chopped coriander leaves and slit green chillies and fry on low flame for 3 minutes.
  2. Add grated coconut, turmeric powder, red chilli powder and salt. Stir well and fry for 4 – 5 minutes on medium flame.
  3. Now add boiled eggs and mix well and fry for 1 – 2 minutes. Put off the flame and add lemon juice.

Tangy and spicy Boiled Egg Masala Fry is ready. Serve with rice as a side dish or roti.
