Pudhina/mint leaves are a good source of Vitamin A and antioxidants. Pudhina leaves aids in indigestion, treats headache and also asthma. It also improves the body immune system.
Today I am posting pudhina/mint leaves podi which is prepared using pudhina leaves, dals, til, red chilles and garlic. It is prepared in Telangana style. This podi has a shell life of more than a week. It goes well with idli and dosa. It is also consumed with hot rice and ghee. It has very good aroma as it is also nutritious.
Let’s go thru the process of preparing pudhina/mint podi.
Ingredients:
Pudhina/ mint leave 4 bunches
Tovar dal 2 tsp
Urad dal 2 tsp
Til 1 tsp
Dry red chilli 10
Garlic 8 cloves
Oil 3 tsp
Salt to taste
Method:
- Remove the pudhina/mint leaves from the stalks. Clean and wash the pudhina/mint leaves and sun-dry them for some time.
- Heat oil in a khadhi, add Tovar dal, urad dal, til, dry red chillies, salt and tamarind and fry on low flame for 3 -4 minutes till the dals change its color to light brown.
- Add pudhina/mint leaves and fry on low flame for another 2 – 3 minutes till it turns crispy. Put off the flame and allow the contents to cool.
- Grind all the ingredients together to a coarse powder and allow it to cool.
- Transfer the powder or pudhina/mint podi to an airtight jar.
- Pudhina/mint podi has a good aroma and it also tastes good.
Serve Pudhina/mint podi with idli, dosa or rice.
