Butter Chicken or Murgh Makhani is one of the most popular Indian Chicken Recipes famous all over the world. Murgh Makhani is a Punjabi dish in which chicken is marinated, fried or roasted then cooked in a mildly spiced curry gravy. It is famous for its mild flavours and deliciously rich gravy.
Ingredients:
Chicken 1.25 kg
For grinding:
Red chilli powder 3 tsp
or
Kashmiri chilli powder 1 tbsp
Garam masala powder 1 tbsp
Thick curd 3/4 cup
Ginger 1/2 tbsp
Food color (orange red) 3 pinch
Garlic 1 tbsp
Salt to taste
For gravy:
Tomato 300 gms (puree)
Onions 3
Green chillies 5
Ginger 1 inch piece
Kasoori methi 1 tbsp
Butter 100 gms
Salt to taste
For garnishing:
Cheese (grated) 2-3 tbsp
Coriander leaves 2 tbsp
Procedure for preparing Butter Chicken:
⦁ Chop the onions (lengthwise), slit the green chillies, chop the ginger (lengthwise).
⦁ Grind all the ingredients for grinding into a smooth paste. Marniate the chicken with the paste and keep in the refrigerator for 4 hours.
⦁ Keep aside 1 tbsp of butter. In a frying pan heat the remaining butter and deep fry the marinated chicken. Keep the fried chicken aside.
⦁ In the same pan add the chopped onions, green chillies and ginger pieces and fry till the onions turn light brownish in color.Add kasoori methi and saute for 1-2 minutes.
⦁ Add tomato puree and fry for 3 minutes till it starts bubbling and low the flame and saute for 2 minutes then add the fried chicken pieces and cook covered on medium flame for 4-5 minutes or till the chicken is done. Put off the flame.
⦁ Transfer Butter Chicken into a serving bowl and garnish with grated cheese, 1tbsp of butter and coriander leaves.
Delicious Butter Chicken is ready. Serve with naan and plain rice.
