Masala Vada is one of the famous snack recipe of Andhra Pradesh.It is prepared using channa dal, green chilies, dry red chilies, onions, ginger, curry leaves and coriander leaves. We add to it homemade masala powder to the mixture which gives a good aroma and spicy taste to the vadas.
Let’s go thru the procedure of preparing Masala Vada:
Ingredients:
Channa dal 1/2 kg
Dry red chillies 10
Green chillies 6
Onions 2
Curry leaves 5 – 6 strands
Coriander leaves 1 bunch
Salt to taste
Oil for deep frying
For grinding:
Coriander seeds 2 tsp
Cinnamon 2
Cloves 3
Black pepper 7
Method:
- Grind all the ingredients under grinding into fine powder. Keep it aside.
- Wash the channa dal and soak it for 3 – 4 hours and drain the water completely. Keep 1 tbsp of soaked channa dal separately for later use.
- Grind channa dal and dry red chillies together without adding water into a coarse paste.
- Chop finely onions, green chillies, ginger, curry leaves and coriander leaves. Crush this ingredients with your hands.
- In a bowl mix ground dal and red chilli paste, green chillies, ginger, onions, curry leaves, coriander leaves and the fine ground masala powder and 1 tbsp of soaked channa dal.
- Make small balls and shape it like rounds by pressing it with your palms.
- Heat oil in a pan/kadhai for deep frying. When the oil is hot enough for deep frying reduce the flame to medium and put the vadas into it carefully.
- Deep fry the vadas on both the sides till golden brown.
Serve Masala vadas with a hot cup of tea.
Note:
- Grind channa dal and red chillies into coarse paste and not to fine paste.
- Spice levels can be increased or decreased according to ones preference.
